To stop the mix from running you add silica powder to it. But... It makes sanding a problem (even impossible) if you add too much. First glue and let your joint cure, then add your filets. That way you can tilt the piece so that gravity keeps the filet over the joint. Just before your filet cures completely lay down a band of light glass. When you sand away your outer radius the glass and the epoxy replace the wood you have removed. Is that understandable?
I will take photos of the bottom of my Agilo. I have treated it badly (not on purpose) not because I want to test the limits of the construction but because we have stupid speed bumps all over town. Now I never touch down. The wood is broken but the glue joints are doing just fine
